I’m sharing what we’re actually making, what worked and what makes dinner easier.
On Wednesdays, I’ll be sharing a quick midweek meal like this, something easy for those “I don’t feel like cooking” days.

Happy Wednesday! The dreaded midweek humpday that can either make you or break you depending on how your week is going.
You’re either full of energy, motivated and about to make a full roast for dinner tonight…
Or, you’re like me - my body is aching from a work out I did, I can’t move a muscle, mentally exhausted from a list of to dos and I have to feed my family dinner.
Tonight is the night I don’t feel like cooking, but we still gotta eat.
This was my go to today and it can be yours too.
How I Make It (Takes 5 mins)

Start with frozen spring onion pancakes. I grabbed these from the 99 Ranch Market and they were on sale for $1.99 for a 5 pack (even better). They come already layered and separated with some plastic so it’s easy to grab one and go.

Frozen Taiwanese Pancakes
You can use Trader Joe’s spring onion pancakes or even tortillas if you have at home. I like to use the uncooked tortillas and cook them up.

Cook the onion pancakes until crispy in a pan with some oil. Set aside.
Crack an egg or 2 in the pan with some oil and press the pancake directly on top so it sticks. Cook a minute or so until you’ve cooked your egg to your preference.

Flip, add chili oil, fold and done.

📌Save this for your next “I don’t feel like cooking” night.
You can serve this with a salad, some fruits or just eat a couple of these and you’re done for the day. It’s crispy, salty, a little spicy… and somehow feels like real food without the effort.
This is one of those meals that saves me and I try to make sure I always have these things on hand whether it’s tortillas or frozen spring onion pancakes to start the meal with.
